Tell us a little bit about Hollyberry Catering. What makes your organization unique in St. Louis?
Hollyberry Baking and Catering Company has been doing business in St. Louis for over 18 years, and Event Catering for 10+ years. We have been voted Favorite Caterer in St. Louis by Sauce Magazine readers for the last 7 years. Our company is unique in a number of ways, but the main “wow factor” difference is featured in the way we treat each event as a separate creative process. We learn our customer’s hearts’ desires by asking in–depth questions from the beginning (vs. simply handing them various package pricing for different menus!), then we customize an event from start to finish to meet our client’s specific needs. Something else that is unique about us is that Hollyberry was one of the first caterers in the area to introduce Small Plate Events, which continues to be a great way to “wow” the client and their guests with amazing-tasting and creative food displays at their event. Our ultimate goal is to help our clients “Show off their Great Taste” when it comes to the entire experience of the event. Although we have now done events for over a decade in STL, we are still one of the most cutting edge caterers in town, which is why Silver Oaks is such a perfect fit for our brides looking for that “something different” menu AND venue!
What item(s) do you provide that every bride should have on her menu?
Definitely a dessert station-always!! A must is our sweet dreams platter which includes 2 flavors of gooey butter cake, marble fudgy brownies, holly dolly bars and our famous cookie. Mousse shots with 5 different flavors, Cutie pie hand pies, our craveable mini gooey butter cupcakes and moist yellow cake pops with a chocolate ganache-just to name a few! Or, for something savory the crostini flight is an amazing passed or stationed item! It is a fig + goat cheese crostini, a honeyed apricot + vanilla ricotta crostini, and a bacon + caramelized onion jam crostini. It’s a wonderful variety that all of your guests are sure to love!
What’s the most unique reception you’ve done in the last year and why?
We had a fresh and fun outdoor wedding over the summer that was quite memorable. We featured the couple’s favorite foods- bbq and small plates on stations to show off their beautiful, sprawling farm land. Their award winning menu included delicious bbq hot off of the grill, contemporary small plates and grown up mac and cheese. Everything was ready to serve….when a tornado came through fast and furious. We rushed the stations under the tent, secured the rentals and ushered the guests out of danger until it passed. Everyone was safe and still had a wonderfully hot and mouthwatering meal waiting for them! We were very proud of our team that day!

Fresh and creative menus that are customized to their budget. When Hollyberry caters an event, people are buzzing about the supremely yummy and unique menu and displays, and they are looking us up online when they get home.
Why does your team enjoy doing wedding receptions at Silver Oaks Chateau?
Our staff loves doing events at Silver Oaks Chateau because the facility was designed specifically for wedding receptions (and one at a time!) But more than the seamless logistics and ease of producing an event, Silver Oaks also creates the perfect backdrop to showcase the most stunning events, including featuring our menu! Everyone wants a wedding that looks like it could be featured in a magazine, and because of Silver Oaks Chateau’s attention to detail, that is always the case. And for my staff, that is like an artist’s work being shown in the best possible light, or a musician working in a theater with excellent acoustics. An industry “marriage” made in heaven!
